Black Garlic Taco Bowls

Perfect for Taco Tuesday

It's Tuesday night, you're tired, work was rough, and now the family is hungry! Keep the ravenous hordes at bay with promise of Black Garlic Taco Bowls

This recipe stays mild (for the kiddos) but the awesome thing about a taco bowl is that it can be as elaborate or as simple as you want to make it. Add salsa, hot sauce, mole, hummus, veggies, tortilla chips, seriously go for it!

Ingredients

Black Garlic Marinade

Weeknight meals are about making it simple. Whatever protein you put this on, it won't fail to bring the flavor. These are only guidelines, you can use this as a base to carry whatever flavors you like! Chipotle or hatch chile powder works great for a bit more kick.

Black Garlic Cloves

8-10 Cloves

Raw Garlic Cloves

3-4 Cloves

Neutral Oil (grapeseed works well)

4 Tbsp

Paprika

1 tsp

Cumin

1 tsp

Salt & Pepper

To Taste

Taco Bowl Fixings

As noted above, the world is your canvas... go big or go simple, you do you!

Chicken Thighs

1 lb.

Any protein will work here. We did ours with chicken, but whatever you have in the fridge or freezer will work. Be sure to thaw it if it was frozen.

or

Pressed Firm Tofu

1 Block Cubed

Make sure that the moisture is well pressed out of the block

Beans

Rice

2-4 Cups

Go by the serving suggestion on your rice package.

Avocado

Salsa

1-2 Spoonfuls

Instructions

 

  1. Set your smoker or grill to 350 F (avoid strong smoke like mesquite... unless you're into it)
  2. If your protein was frozen, be sure it is thawed. Don't be ashamed to microwave.
  3. Get your beans and rice going. Follow the instructions on the packaging. 
  4. Combine your marinade ingredients. If you have a blender, blend 'em! If you don't, then mince your garlics and whisk everything together.
  5. Using a spoon or a fork, spread the marinade over your protein. Got time to marinade them? Awesome, throw protein and marinade in a zipper bag, shake to coat.
  6. Slap that protein on the grill and cook until internal temperature is reached. If you're using tofu, a pan or grilling sheet may be useful here to prevent losses. Internal temp for poultry should be no less than 165F.
  7. Pull from grill and let rest on a cutting board. Slice into strips or cube.
  8. Assemble your bowls. Throw everything in there that you want and dig in!
