Black Garlic Pesto

Kick your pesto up a notch!

Pesto, no matter how its made, is a beautiful accompaniment to pasta

Ingredients

Black Garlic Pesto

Weeknight meals are about making it simple. Whatever protein you put this on, it won't fail to bring the flavor. These are only guidelines, you can use this as a base to carry whatever flavors you like! Chipotle or hatch chile powder works great for a bit more kick.

Black Garlic Cloves

1-2 Cloves

Raw Garlic Cloves

3-4 Cloves

Pistachios or Pine Nuts

1/3 Cup

Fresh Basil Leaves

2 Cups packed

Extra Virgin Olive Oil

4 Tbsp

Grated Parmesan Cheese

1/4 Cup

Grated Romano

1/4 Cup

Salt & Pepper

To Taste

Pasta & Bread

Go with whatever pasta you like! Make sure to pull the pasta out when it's al dente and cook it the rest of the way in the pesto!

Whatever kind you like. Cook servings per package instructions.

French or Sourdough Bread

1 Loaf

Garlic Cloves

3-4 Cloves

Black Garlic Cloves

1-2 Cloves

Unsalted Butter

4 Tbsp

Instructions

 

  1. Preheat your oven to 350 and get your water boiling.
  2. Cook your pasta per the package instructions, removing it from the water when al dente and draining it. This is often a minute or two prior to the package instructions. 
  3. While your pasta cooks: Mince your garlic, grate your cheese, and wash your basil.
  4. Using a mortar and pestle crush and combine all of the pesto ingredients except your salt and pepper (a blender or food processor both work, but can create a bitter flavor in the oil) 
  5. Taste and adjust any ingredients that you feel are lacking. Add salt and pepper to taste
  6. Feel free to zest in some lemon or add parsley to this, whatever makes your taste buds happy
  7. Using the same pot you made your pasta in, toss your pasta with your pesto to make sure it evenly coats it.
  8. Slice your bread. If you have a baguette style loaf, cut length wise. If you have a boule loaf slice into sandwich slices.
  9. Butter your bread like it has something to hide... seriously smother it in butter.
  10. Mince up your two types of garlic and spread it onto the buttered bread evenly.
  11. Put your slices or halved loaf onto a baking sheet and bake until a crisp golden grown around the edges with a nice golden middle.
  12. EAT! With all these smells in your kitchen even the rarely seen teenager will migrate to the kitchen.
