Ingredients

Black Garlic Marinade

Weeknight meals are about making it simple. Whatever protein you put this on, it won't fail to bring the flavor. These are only guidelines, you can use this as a base to carry whatever flavors you like! If you want to make it more Mediterranean, Asian, or Mexican inspired, then just mix up your spices.

Black Garlic Cloves

8-10 Cloves

Raw Garlic Cloves

3-4 Cloves

Neutral Oil (grapeseed works well)

4 Tbsp

Paprika

1 tsp

Cumin

1 tsp

Salt & Pepper

To Taste

Protein

This recipe works well with most any proteins, but something like chicken, tofu, or lions mane mushrooms take on the flavor well.

Chicken Thighs

1 lb.

Any protein will work here. We did ours with chicken, but whatever you have in the fridge or freezer will work. Be sure to thaw it if it was frozen.

or

Pressed Firm Tofu

1 Block Cubed

Make sure that the moisture is well pressed out of the block

Instructions

 

  1. Set your smoker or grill to 350 F (avoid strong smoke like mesquite... unless you're into it)
  2. If your protein was frozen, be sure it is thawed. Don't be ashamed to microwave.
  3. Combine your marinade ingredients. If you have a blender, blend 'em! If you don't, then mince your garlics and whisk everything together.
  4. Using a spoon or a fork, spread the marinade over your protein. Got time to marinade them? Awesome, throw the protein and marinade in a zipper bag, shake to coat.
  5. Slap that protein on the grill and cook until internal temperature is reached. If you're using tofu, a pan or grilling sheet may be useful here to prevent losses. Internal temp for poultry should be no less than 165F.
  6. Pull from grill and let rest on a cutting board for about 10min. Slice into strips or cube.
  7. Throw together with your favorite salad, Taco Bowl , Sandwich, or just eat it straight!
